The story
At Kappa Maki, two crafts share a counter. Sushi rice is seasoned and fanned the traditional way. Kimbap is rolled tight in sesame-oiled nori. Tonkotsu broth simmers from morning. Matcha is whisked to order in a warmed bowl.
